Come and Enjoy a Culinary Experience When the Fairmont Pacific Rim Opens!
As Vancouver opens its arms to welcome the world to the Winter Olympics, the countdown has also started at the new Fairmont Pacific Rim. And, under the keen eye of executive chef David Wong, who represented Canada at the recent Bocuse d’Or culinary event in France, it’s full steam ahead.
The wallet-friendly Pan-Asian bistro, Oru, features an open kitchen and boasts the largest sake cellar in the city. The cuisine plays on the Pacific Rim location serving flavours that reflect a harmonious fusion of east and west. An authentic tandoori oven bakes naan, bannock and lavish which is served warm with the signature condiment, a house-made sambal. The wine list offers over 100 wines with labels from around the world, and an emphasis on regional selections.
Oru produces its own still and sparkling water, with an American Green Restaurant Association endorsed purification system; the bottles are washed and re-used, significantly reducing the carbon footprint.
In the Lobby Lounge, the trademark could very well be the specially designed Art Deco trolley used to serve afternoon artisan teas and tableside cocktails. Cool jazz is served six nights a week, and complements the raw bar’s seasonal seafood, sushi and sashimi.
Animated and energetic Giovane, which means “young” in Italian, is a two-level, licensed Italian-inspired bakery and cafe. Tasty trademarks include house-roasted coffee, a charcuterie, and specialty “ooh-la-la” designer cakes, elegantly packaged and beribboned, which can be ordered on-line. The room is bordered by a 50’-long marketplace wall with an eclectic array of local crafts and culinary items to browse and shop.
